You can add shortcuts for all menu actions in the System Preferences. Goto Keyboard > Keyboard Shortcuts > Application Shortcuts. Click “+”, set Glyphs Application: type in the menu item title (exactly how it appears in the menu) and add a shortcut.
You can overwrite existing shortcuts with that.
Interesting question, how do I have to type in for example:
Font (Menu)
Update Glyph Info (and then submenu)
do I have to separate them by a comma or something else?
No, only the actual menu item so it is only “Update Glyph Info”.
