After each increase/decrease, the focus is instantly lost, so it becomes virtually impossible to use the cursor up/down.

You mean the External value in the Axis-Coordinates of the Masters tab in Font Info? I cannot reproduce this. Is it still the case for you? If so, which version of macOS are you using?

No, I mean the coordinates of the exports in the Exports tab in Font Info, internal as well as external.

Adjusting the masters coordinates by cursor keys works for me.

Glyphs 4200 on macOS 26.7.1.
