I’m trying to understand what this palette does, I can change the text tab preview, which is amazing:
But it looks like I can edit the actual drawing?
What’s this actually doing? It’s not saved though?

This is the Axes Sidebar. Use it to interpolate the axes of the font that you have set up in Font Info → Font → Axes. For Smart Glyphs, there is also a heading Glyph Axes where you can find the glyphs-local axes (what used to be the smart properties).
You should not be able to edit the drawing when in an interpolated mode. Looks like this issue was introduce at the very last minute. We’ll fix it such that editing the outline is not possible while interpolating.
For now, right-click the canvas and choose Reset Interpolation Preview before editing.
Very cool thanks for explaining. I was thinking this would be a really great way to create intermediate masters. As previously you could only preview it in the preview panel but now being able to see it in the entire tab is much more useful.
