Hello!
I’m curious if anyone here is an expert in curve construction (?).
I really was keen to include an infinity symbol glyph but I could only manage to get it looking decent by placing many (too many) nodes - please see the photo attached 
.
Is there a way to smoothen out how I’ve gone about things that is somewhat straight forward?

It looks like you tried drawing with straight paths. This tutorial should help:
Your glyph has all square nodes which aren’t ideal. To fix this, convert them to circle nodes. You can do this by either double-clicking each one or using the Tidy Up Paths option (Select the shape using Cmnd+A > Path > Tidy Up Paths. Next, select the unwanted nodes on the shape and delete them with the Delete button. Finally, use the Fit Curve tool to smoothen the curves. Hope this helps!
