I’m working on a extruded 3D font and was wondering how low the extruded glyph may reach.

Depends on where it is supposed to work. I cannot spare you from testing in the apps you care most about.
Be prepared for user complaints about oversized cursors in Adobe apps.
I would put the lowest part in the winDescent only and keep the sTypo and hhea values ‘normal’ and in sync, and turn on the Use Typo Metrics Parameter.
It’s meant to work for desktop publishing apps like Indesign or Xpress.
Of course Webfont compatibility would be great too …
