I’m currently working on Nabatean, Etruscan, Umbrian and Oscan scripts and I would like to know if Glyphs app has an option to define wether the script is right to left or left to right.

There is no way to do that manually. The writing direction setting in Glyphs influences the generated feature code. But that can be overwritten.
I added the scripts to the RTL set.
