Why would I open corners?

I’m a complete type design and Glyphs newbie, so apologies for this basic question. I’m learning a lot, but I haven’t been able to figure this out…

I know how to ‘open corners’, but I don’t know why I would want to do that. What’s an example of how it can be useful?

In order to separately access the two segments linked by the corner point. You can change one without affecting the other. This makes designing easier, but is especially important in interpolation:
