When I try to cut a path with the knife, I get a twist rather than an actual cut:

It worked normally after I closed the path (it was open before). Path orientation problem?
Perhaps two paths on top of each other? That is what the knife does when you cut across two paths.
Are you guys considering implementing that thing I asked about pressing a key while cutting just to add points instead of literally cutting the shape? It would come real handy while designing script fonts…

This can happen if you try to cut an open path. The knife tool only plays well with closed paths.
