It would be handy if the “add extremes” menu command worked only on selected segments. (If no segments are selected, it would work on the whole glyph.)
There are places where I want extremes and places I don’t.
You can add extremes with the pen tool. Hold down the shift key and click the segment you like to add a extreme point to.
