When you have a font with alternative glyphs for French and English, does every alternate have to be created and named as below?
It is my understanding that I could use .001 or .alt

You often see them organized as stylistic sets, so a .ss01 suffix is useful.
Do you mean that I should use the .ss01 rather than .alt on each separate glyph (i.e., Aacute.ss01) on each glyph ( Agrave.ss01 ) and so on?
That would allow Glyphs to auto-generate a stylistic set for you.
You can decompose all accented letters in Opentype. Then apply the stylistic set and rely on mark positioning to display your letters.
Or you just create all needed combinations. With components, that is quite manageable.
