What does it means when opening a UFO and getting greyed out custom parameters - what does the grey signify?

Usually that the Property is not recognised as a parameter.
Try leaving out the prefixes, e.g. strikeoutPosition instead of openTypeOS2StrikeoutPosition.

I tried this and the parameters remain greyed out, are they still not recognized? or is something else affecting its appearance?
Not all of these are supported, I guess. Not on my Mac now, will send you an updated list of all parameters tomorrow.
