In glyphs there is a filter “Round Corners” that makes straight terminals into rounded ones.
Is there a reversed filter that makes rounded corners into straight ones? Or a custom script?

There is the Make Corner filter, available from the plugin manager.
Or here:
Or you select the rounded corner, right click, and choose the Make Corner function from the context menu.
What it does is it elongates the adjacent segments until they intersect.
